Swiss Steak

 

2 pounds Round Steak, sliced into 1-1/2 to 2 inch pieces

1/4 cup Flour

1 teaspoon Salt

1/8 teaspoon Pepper

2 tablespoons Fat

2 cups Canned Tomatoes

2 Onions, sliced

1 Clove Garlic, minced

1 teaspoon Salt

2 tablespoons Flour

1/4 cup Water

Wipe meat with damp cloth and trim off excess fat. Combine flour, salt and pepper. With a wooden mallet or the back of a heavy knife, pound flour into both sides of meat. Heat fat in a frying pan on high heat. Brown meat very quickly on both sides on medium heat. Combine tomatoes, onions, garlic and salt and pour over meat. Cover. Increase to high heat. When mixture is steaming, reduce heat. Continue cooking for about 1-1/2 hours or until meat is tender. Remove meat and thicken gravy with 2 tablespoons flour and 1/4 cup water. Stir well. Cook for a few minutes. Pour over meat and serve.
