Turkey Jook
1 Turkey Carcass
3 quarts Water
1 cup Rice, rinsed
Ginger Root, crushed
Green Onions
Salt to taste
Fresh Spinach, rinsed
1 bunch Chinese Parsley, chopped
Boil Turkey carcass in water until the meat falls off the bones. Strain the broth and remove the bones. Add the meat to the broth. Add uncooked rice. Stir. Add ginger, salt, and onions. Bring to a boil again, and then simmer for an hour. Add spinach an parsley. Serve hot. Alter the amounts of rice and vegetables according to your taste.
