Mango Bread

 

2 c. flour, sifted

2 tsp. cinnamon

2 tsp. baking soda

1/2 tsp. salt

1-1/4 c. sugar

2 lg. eggs

3/4 c. oil

2-1/2 c. chopped mangoes

1 tsp. lemon juice

1/2 c. raisins

Combine flour, cinnamon, soda, salt and sugar. Beat eggs with oil and add to flour mixture. Add mangoes, lemon juice and raisins.

Turn into 2 greased 8x4” loaf pans and bake at 350 degrees for 1 hour or until wood pick inserted in center comes out clean.
