Quick Brown Bread with Molasses

 

1 c. all-purpose flour

1 tsp. baking soda

1 c. All-Bran or Bran Bud cereal

2 tbsp. margarine

3/4 c. very hot water

1/2 tsp. salt

1 egg

1/2 c. raisins or chopped prunes, dates or figs

1/3 c. molasses

Stir flour, baking soda and salt. Set aside until needed. Beat the egg. In a large bowl, mix together the beaten egg, cereal, dried fruit and molasses. Add water and margarine, stirring until margarine is melted. Add the dry ingredients. Mix only until ingredients are combined. Spread batter evenly to fill a greased 9x5x3” loaf pan about 2/3 full. Bake in oven at 350 degrees for about 45 minutes. Bread is done when knife is inserted in center of loaf comes out clean. Remove bread from pan. Cool slightly.

NOTE: If desired, you can bake the bread in 2 greased 1 lb. coffee cans, filled 2/3 full. Bake only about 35 minutes.
