Jiffy Orange-Nut Bread

 

1 orange

1 egg, slightly beaten

1/3 c. Wesson oil (or melted shortening)

2 tsp. vanilla

2/3 c. sugar

2 c. flour

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

1/2 c. chopped nuts

Into a bowl grate the rind from a (washed) orange. Then squeeze and add the juice from the same orange. Add slightly beaten egg, oil (or melted shortening), vanilla and sugar. Beat together for blending, then add flour, baking soda, baking powder and salt. Add nuts. Mix well together. Batter will be moist but will appear lumpy. Turn into a pan (6x9” approx.) and with a spoon spread to the corners of the pan. Sprinkle mixture with a topping of 1/4 c. sugar, 1 tsp. cinnamon and 1 tsp. salad oil.

Bake at 350 degrees for 30-40 minutes or until a toothpick comes out clean. Cool before cutting.
